Not exactly zombies per se, but excellant book. Semi fact/fiction, kind of like a docu-drama and really very well done and not enough people have read it! 
It charts the rise of ebola, the distinctions in the viral strain and possible outbreak scenarios. It is an absolutely engaging and utterly terrifying read, making an absolutely perfect balance between fact and fiction.

Whilst not being zombie related as we know zombies traditionally, should the mutations of the strain continue in a world wide breakout it could potentially be the likely cause of walking corpses which seek to infect living tissue driven by the virus's needs, since it shuts down the higher brain functions just before death, that would only need too evolve into a strain that shuts down the higher brain functions and then leaves the vital organs alone and uses the senses of the "host" body too seek out uninfected victims to transfer too. Least that's what I think

Really, anything which gives an accurate description of the spread of disease is good reading for someone who wants to be prepared for a zombie outbreak.
Ebola is a particularily good example, as I believe that the vectors which ebola is transferred through are the same as those commonly attributed to zombie diseases.
