One of the easiest ways to maintain good health after a zombie invasion is something you can do now, before the zombies even appear: exercise!
The better your health and fitness now, the longer you'll be able to fight and survive given poor rations, little water, and little chance to rest. For the first few days after a full outbreak, the chances to stop and rest up will be few, far between, and probably perilous. The better your level of fitness now, the better you'll be able to sustain the activities needed for survival when it really becomes necessary.
If the idea of a zombie invasion seems like a theoretical arm-chair-general type of thought exercise, how about a tornado? Flood? Riot? General social collapse? If you're prepared for zombies, you're probably prepared for most anything else you'll come across.
Ask yourself this: are you actually prepared to hike 20+ miles with loaded weapons, a 50-pound pack, and a gallon or more of water, over rough terrain, with enough left over to fight and/or run when you get to your destination?

Personally, I'm content to leave the zombie thing as an armchair thought exercise.
I don't really think that social collapse is at all imminent; and I live in an area with no real chance of a signifigant natural disaster.

/agree with the OP. you should be able to do that shit, zombies or no.
(never hiked with loaded weapons, but i'm a trail guide on weekends, and i'm ceaselessly amazed and how inept most people are at hiking with even just a 40-pound pack)

I've found that exercise is more fun when it's thought of in terms of zombie survival. For example, my wife and I go bicycling a fair bit; now I enjoy bicycling, but if you're also thinking in terms of learning back roads and alternate routes of escape, that adds a little bit of extra fun. My wife indulges me in this as it gets my ass up off the couch.

That is a cool idea. I think that any exercise routine would be improved if you thought of it in terms of zombies.
While weight lifting, plan what you would do if zombies suddenly burst in the door.
While running, figure out the quickest way to safety from wherever you are.
While swimming, figure out places in the lake which a zombie would have a hard time to get to, or think about how you would get from the pool to your clothes to safety. Or, on that note, consider what it would be like to go through the initial rounds of a zombie event in a swimsuit.
While we are on the idea of exercise, one could also consider the idea of *fasting.

Disclaimer: I am not telling you to get all anorexic. No, that would be counter productive and counter intuitive. However, I am telling you that you should take a day or so every now and then to eat just one big meal or two mediums sized meals while continuing your regular exercise routine (eat just simple bread and water in-between meals) as this will give you a realistic idea of the hunger (pains) you will face come z-day; and thus help you to be prepared to combat them.
