Always the chance of not so nice people getting a hold of a tank, an APC, or creating their own treading hulk of destruction. Although these are not the win all fight vehicle. Any ideas?
I already posted a big rant about this, but my internet froze so now I have to start from scratch
Neutralizing an armoured vehicle would be very hard in the event of a Post Z-Day scenario. Items and equipment one would have picked up or scavenged would probably not be very effective, if effective at all, against an armoured fighting vehicle. Even if you did manage to stumble across some sort of Anti-Tank weapon, odds are that it's either out of ammo, busted, or too damn heavy to go lugging around the country.
However, remember, your technically not fighting the vehicle per say, but the crew. And thankfully the crew is human (Or at least I hope it would be human. If zombies can pilot tanks, I think we're screwed from the get go). That means that they'll have to rest, eat and drink, or even *INCOMING SWEAR* shit at some point. Plus fuel wouldn't be that abundant, and ammunition for the vehicle even more scare. Not only would the crew have to find the right caliber for the varying weapons, but in the case of machine guns they would need to find belts and belt links that can string the smaller rounds together. It would be hard to find these because alot of Machine Gun belts are connected by links that break up and fly apart after being feed through.
There are two scenarios when encountering Armor that would fight.
1) It hasn't seen you, but the group could potentially be hostile. What to do in this case could is either avoid the group altogether, or pick out the crew and wait until the group falls asleep or becomes vulnerable (E.g. party and get drunk, move quiet a distance away from the vehicle) to attack. Trying to take on an alerted Armoured vehicle would probably be suicide if you fought it on any terms beside your own.
2) They have seen you and have engaged. What you could do in this case is retreat to ground that is in your favour. Good Anti-Armour fighting country would be thick brush, even thin forests can be effective depending on the vehicle your fighting. Swampy, flooded or very wet land with defilades and cover can be good anti-tank ground. Or built up urban areas. However, you'll want to avoid small towns and villages whose buildings are mostly ground level. You'll want to engage the vehicle from height, since most amoured turrets cannot traverse to a steep angle.
However, if the vehicle is supported by infantry fighters, or there is more then one vehicle, it might just be better to turn tail and flee far into the hills.
Main point? Patience and stealth are your two greatest weapons. Remember that the vehicle cannot roll on forever, it's crew is human. If you lack any kind of working Anti-Tank military grade weaponry, it is imperative that you only engage the tank on ground of your choosing, or only when the crew is vulnerable. And it is never cowardly to run. The British ran from France at the onset of World War 2, the Russians retreated until the Germans exposed weakness, the Americans retreated before the Japs exposed their fleet. And these guys won. As do alot of people in violent history who realize stubbornly fighting and defending cannot always lead to victory.

Some cobbled together "tank" such as a bulldozer or armored up car might be slightly easyer to take out.

If were dealing with something that cant be pierced by armored bullets then i would say the best way to disable the crew or machinery would be fire.
A moltov cocktail type device. Any week points where liquid could be introduced would cause some type of damage or distress to the crew of a veicle of that type.
Or a roundabout way of attacking. Such as, stalk the machine, till the crew has to stop for fuel or just to take 5 and whammo.

Sure, if it's a WW2 tank. Anyone heard of a tank trap?
If you had the man power and or heavy equipment, tank traps could be built, but if your geography isnt favorable, whats the point, they can still fire at you or go around...i dont know..there have to be some good situations where you could employ them...like if you had few roads or paths in and out of an area you were defending....
Deny them the ability to transverse the ground to reach you would be a good idea. Specially if its one or few cobbled together AFV's

Equipment is no problem. One 6' deep and 10' across I believe can stop an Abrams. I've got a pretty big ravine east of my position, swampland along the north, and thick woodlands along with creeks/stream/pond to the west. South is the only place I need one. Although with heavy rain I'm sure they've have enough trouble coming down the road.
Main thing- demobilize the thing before it can get to your defensive location. They will be stuck out of reach swamped by undead. I am sure then, they will be too busy with their current situation than to be looking to kill you or destroy your outpost.

What type of treads are we talking about for the vehicle?
Demobilization again is the key. Also, if you can at any given time hide from strangers to scout them first, do it.
Plus, I am not sure if we want to destroy something that can be rebuilt - if you catch my drift.
