We've all seen it, the zombies gather in hordes but seemingly refuse to eat eachother. We've seen that they are perfectly willing to eat a body that has yet to reanimate, and they are hell-bent on eating the living. But how do they know?
There are a number of options:
Sight - They can see the difference
Scent - They can smell you and know the difference
Pulsation - They can hear things such as the heartbeat
Heat - They can detect the head signature different from the environment such as that of a living human body and animals
We know that they are attracted to bright lights and sounds, so obviously the hearing senses and optical nerves are kept alive, but their primitive intelligence is extremely base, leading me to estimate about that of a pre-schooler, probably less and certainly more distinctive a difference.
since zombie doesnt eat zombie, and lets face it, your face and windpipe and so forth can be torn off by a zombie attack when you die, im gonna have to go with heat n sight. smell is possible but heat is also a distinct possibility. hearing will probably be bad, jsut an assumption
I belive that zombies use sight and hearing to detect us. I do not think their hearing is so good to detect a heartbeat, but I am willing to assume it is better then ours. Sight is a given until the eyes completely decompose. They may be able to tell the difference in scents between dead and living, but I only guessing that this is in closer quarters. Them being able to detect people by heat is absurd since decomposing bodies give off heat so if they detect things by heat they would attack each other.
You also forgot another option of a "sixth sense" or "radar", but I believe this also a absurd thought.
Oh and to add. There senses of sight, smell, and hearing could be enhanced since they no longer feel. You may all know that blind and deaf people have their other senses heigthened to make up for the lack of one or more. This may also apply to the undead.
My guess - can use sight and hearing to detect, and sight and smell to differentiate. SO, based on that, walking all dead-like and covering yourself in eau de rotting ass will be a reasonable camouflage...

Well general consensus currently seems to be a combination of sight and hearing coupled with a residual differentiation ability.
