brown 2" thick ribeye in a large skillet both sides. in (suewit) beef fat 2 tablespoons. take out stakes and set aside, throw in a 1/4 cup finely diced onion and 2 cloves of garlic. add 1/2 cup balsamic vinegar and a cup of button mushrooms be sure to scrape the bottom of the pan with the spoon.. let cook down a little. take both stakes and set in a casserole pan disposable aluminum is best cover with the souse and tightly cover with aluminum foal and bake at 200f for 2 to 3 hours. (rare to medium rare to medium.)
