I would* stick with a large vehicle at all. Im going with either my ktm450sxc(dirtbike) or my polaris outlaw525(quad). Strapping both of my gas tanks to which ever one, Hopping on with my gear and taking off.

As for vehicle - Prison busses are armored, and they could be stripped of the seats to give for storage room to have a seperate tank on the interior and a fefueling port from the inside. Its just a matter of getting the impact-proof glass or welding metal grates over the outside of the glass.

the only way I can see this making any sense at all is if you had a PLAN of where you were headed.
If you were trying to get from san franciso to anchorage alaska for example - then my plan would be to set up a secure base ASAP
then
raid for all the supplies you can
then send out scouts to find a new base somewhere north
then send a team to secure said new base and start gathering supplies
then
caravan remainder of people and as much stuff as possible to new base
then
repeat until you arrive at destination or choose to stop
it may take you two months to move from one base to another but you'll live doing it.
